The Still, Distillery and Our Master Distiller

In the heart of our craft, our hand-hammered Portuguese copper alembic pot still, emerges as a poetic maestro of our spirits production

A luminary vessel steeped in the echoes of wisdom and alchemy. Forged with the rhythmic cadence of ancient techniques, this copper artisan stands as an embodiment of our devotion to artisanal and sustainable practices.

Seamlessly weaving the spirit of our biodynamically grown grapes into every drop. Within its copper-wrought embrace, we distill the essence of sun-drenched vineyards and orchards with conscientious cultivation. This noble still, with its gleaming curves, is more than just a vessel; it is a storyteller, sharing tales of terroir and craftsmanship.

As the vapors ascend within this philosopher’s alembic, they carry the soul of our vision.

Our grape and fruit brandies take form, each sip echoing the meticulous care bestowed upon our organic bounty. Grappas emerge, vibrant and unapologetic, encapsulating the bold spirit of our grapes. Preserving the delicate aromas and essence of our apples and pears. Vodkas, distilled with precision and finesse, find their genesis in these copper-hewn halls. The hand-hammered still is a conduit of dreams, a maestro orchestrating the symphony of flavors that defines our spirited creations.

Master Distiller Lenora Thelen’s journey

Lenora‘ Thelen’s journey into winemaking and distilling began in 2010 when she ventured into a retail wine and spirits department, driven by a desire to understand the products she sold. “At the time I didn’t drink, but felt that I should know more about what I was selling,” she reflects. Experimenting with wines ranging from Moscato to Riesling and exploring the complexities of Rosé and red varietals like Merlot and Cabernet Sauvignon, Lenora’s curiosity ignited. “I was shocked at how sweet it was,” she recalls of her early tastings, sparking a quest for knowledge that led her deeper into the world of wine.
In 2015, seeking to deepen her understanding, Lenora began volunteering at Wilridge. “I would volunteer on my days off: cleaning tanks, topping up barrels, stomping grapes, hauling hoses, punching down fermentations, bottling, and pouring at events,” she recounts. As she immersed herself in every aspect of the winemaking process, Lenora embraced the role of a true Cellar Rat, finding joy in every task and an unyielding passion for the craft.
Reflecting on her transition from retail to winemaking, Lenora marvels at the labor and dedication behind every bottle. “When I worked in retail, I wondered why wine costs so much,” she muses. “After participating in the production process, now I can’t believe it’s not more expensive!” Her journey from novice to seasoned winemaker has been marked by a deep appreciation for the craftsmanship and artistry that defines the industry.
In 2021, Lenora’s dedication and hard work were recognized when she was offered a full-time position as Assistant Winemaker at Wilridge. “It was hard to leave retail and all my friends, but I could not pass up this opportunity,” she reflects. Now entrusted with overseeing the Wilridge Alembic Pot Still alongside her winemaking duties, Lenora embraces her role as Winemaker and Master Distiller with humility and a perpetual thirst for knowledge. “While I have now been promoted to Winemaker and Master Distiller, I still feel like a Cellar Rat because there is always more to learn,” she asserts. Lenora credits her journey to Wilridge founder Paul Beveridge and her supportive family, who believed in her dream of crafting exceptional Washington wines and spirits.
